Recipe: Thai Chicken Lettuce Wraps // Pair: Hey Man blonde ale

  • 1/2 pound chicken breasts, cut small

  • extra virgin olive oil

  • 4 cloves garlic, minced

  • small yellow onion, chopped

  • a bag of coleslaw

  • 3 green onions, chopped

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/3 cup sweet chili sauce

  • 1 heaping tbsp peanut butter

  • 1/2 tsp freshly grated ginger

  • 2 tsp low sodium soy sauce

  • red pepper flakes

  • Boston bibb lettuce

  1. Heat oil in a large skillet over medium.

  2. Add the chicken, garlic, onion, salt, and pepper. Saute until chicken is completely cooked. Add to the skillet the coleslaw mix and green onions. Stir and cook for two more minutes.

  3. In a small bowl, combine the sweet chili sauce, ginger, peanut butter, soy sauce, and red pepper flakes to taste. Stir until smooth.

  4. Add the sauce to the chicken and coleslaw mix. Toss to combine everything.

  5. Spoon mixture into lettuce cups to eat.
