Recipe: Chicken and Lime Soup // Pair: Round Here Beer kolsh

  • 1 yellow onion

  • 1 jalapeno

  • 4 cloves garlic

  • 1 lime

  • 1 tsp oregano

  • 1/2 tbsp cumin

  • 6 cups chicken broth

  • a pack of chicken tenderloins

  • 2 ten ounce cans of tomatoes with chiles

  • extra virgin olive oil

  1. Dice the onion and garlic, mince the garlic. In a soup pot, heat oil over medium. Add the onion, jalapeno and garlic and cook until soft.

  2. Add the the pot the chicken tenderloins, broth, diced tomatoes (with juices), oregano, and cumin. Place a lid on the pot, turn the heat to high, and bring the soup to a boil. Reduce heat to low and simmer the soup for 45 minutes.

  3. After 45 minutes, remove the chicken tenderloins and shred them using two forks. Return the shredded chicken to the pot. Squeeze the juice of one lime into the pot.
